Roasted Tomato and Garlic Soup

A tasty roasted sweet garlic soup recipe; The inspiration for this dish is still a mystery but this sweet and garlicky bread soup recipe is here to stay.


  • 2 tsp Olive Oil
  • 1 Small onion, finely chopped
  • 3 garlic cloves, roasted
  • 1Kg (21/4lb) ripe cherry tomatoes, halved
  • 1 handful of garlic chives (or use regular chives), chopped
  • 700ml (3 cups) water
  • 2 potatoes, cut into small pieces (optional)
  • Salt and black pepper
  • Pinch of light brown sugar
  • 200ml (1 cup) pouring (light) cream


  • Heat olive oil in a Home Classidc pot over a medium-high heat. Add onion and squeeze in the pulp from the roasted garlic cloves. Saute this for about 2-3 minutes until it is golden brown.
  • Add the cherry tomatoes and continue to sauté for further 3-4 minutes until the mixture is heated through and just beginning to break down.
  • Add in half the garlic chives. Stir in water and allow the mixture to boil, and then add the potatoes.
  • Reduce the heat and simmer for about 10 minutes until everything has softened.
  • Blitz the mixture to a smooth consistency using a handheld blender or a food procesoor, season the soup with salt and pepper to taste and add sugar.
  • Pour cream into the soup and allow the mixture to warm.
  • Adjust the seasoning if necessary and ladle the soup into warmed serving bowls.
  • Garnish each bowl with the remaining garlic chives.
